The “Accademia Partenopea del Baccalà” or the “Accademia dei Baccalajuoli”, aims to protect all the exquisite arts developed around the Gadus Morhua, both in the salty version of cod and in dried codfish, protecting traditional preparations and promoting their improvement and diffusion in Italy and abroad.
