COD SASHIMI IN PONZU SAUCE

PREPARING

For the Ponzu sauce: bring the soy to a boil with water, honey, sugar, ginger and lemongrass. Add the juice of half an orange and half a lemon.

For the cod: cut the cod for sashimi.

Finishing: lay a sheet of Nori seaweed, place the cod sashimi on top, sprinkle with ponzu sauce, wakame seaweed and sprinkle with white sesame seeds. Garnish with the sweet and sour ginger.
